Funding awarded to support the reduction of food waste at Highland Coast Hotels

We are thrilled to be awarded funding in collaboration with the University of the Highlands and Islands from the Food and Drink Net Zero Challenge fund. The fund set up by Interface - The knowledge connection for business and Scotland Food & Drink will support our quest for environmental sustainability.

Working with the University of Highlands and Islands, we will be recycling the seafood waste from our restaurants to be re-purposed back into the land as organic fertiliser. Our role in this project will help us to reduce our food waste by supplying the labs with the many crustacean shells that are leftover after our guests enjoy the shell fish available in our restaurants.

We source our shell fish locally where possible so it’s great to know that what the sea and lochs provide can be ploughed back into the local land and the cycle continues!
